How To Prepare Vegan Lasagna: Discover 2 Recipes

Lasagna are easily adaptable and can be prepared with different ingredients and different toppings. Vegan lasagna is therefore quite possible and, moreover, delicious.

It can be difficult, for many, to imagine a vegan lasagna, that is to say without cheese or béchamel. However,  vegan lasagna can be as good as traditional ones and even include vegan  cheese and béchamel. Moreover, since they contain vegetables, it is a dish rich in vitamins and nutrients. How to make vegan lasagna

Vegan lasagna  must not contain any product of animal origin. So, in order to be able to prepare a dish of this type, many already say to themselves that we will have to do without cheese, béchamel and butter.

But  there are other ways to prepare and enjoy lasagna so delicious  that everyone, without exception (even non-vegans) will want to take it back.

Indeed, there are many ways to prepare tasty lasagna, and not just the traditional Bolognese lasagna. This is a dish that can be easily adapted and  therefore we can perfectly prepare vegan lasagna with vegetables, vegan cheese, vegan béchamel and vegetable butter.

1. Vegetable lasagna with vegan bechamel sauce

The first alternative to enjoying vegan lasagna involves preparing a béchamel sauce with ingredients of plant origin. Have you never tried? Follow the instructions and enjoy these lasagna with the family.

Ingredients for lasagna

  • Lasagna sheets
  • Vegan grated cheese

For garnish

  • Mushrooms (300 g)
  • 1 eggplant
  • 1 zucchini
  • 2 onions
  • 1 small red pepper (or medium)
  • 2 cloves garlic
  • Olive oil
  • Pepper
  • Salt

For the vegan bechamel:

  • 4 cups of unsweetened vegetable milk (1 liter)
  • 5 tablespoons of flour
  • 1 large spoonful of vegetable butter
  • Nutmeg
  • Salt

Preparation of the béchamel

  • First, add all the ingredients to a saucepan. If you want, you can sift the flour to avoid lumps.
  • Then  we need to boil the contents and stir constantly to make sure that the mixture thickens and becomes homogeneous and without lumps.
  • Finally, we can remove the sauce from the heat and set it aside.

The garnish

  • You must first wash and peel all the vegetables, then cut them into small pieces.
  • Then  we need to pour a drizzle of olive oil into a pan and brown all the vegetables, adding pepper and salt. We have to fry them until they turn golden.

Lasagna

  • According to the leaves we have chosen, we need to prepare them by following the instructions. Some must be boiled, others soaked, others can go straight to the oven … So read the instructions carefully before preparing them.
  • During this time, you can preheat the oven to 180 degrees.
  • When the leaves are ready, we will place a layer in a gratin dish and then add a layer of garnish on top.
  • Then we will have to repeat the same operation: a layer of leaves and then a layer of filling.
  • We will continue until there are no more leaves.
  • Then we will pour the béchamel on the last layer as well as vegan cheese on top.
  • Finally, we will put the dish in the oven for about 15 minutes, until golden brown.
  • You can finally enjoy these delicious vegan lasagna with vegetables and bechamel sauce!

2. Vegetable lasagna

If you don’t feel like béchamel, you can try using only vegetables. This recipe is delicious and you can enjoy it for lunch as well as for dinner.

Ingredients for lasagna

  • Lasagna sheets
  • Vegan grated cheese

For garnish

  • Mushrooms (300 g)
  • 1 can of tomatoes for sofrito
  • Spinach (200 g)
  • Olive oil
  • 1 red pepper
  • an eggplant
  • 1 zucchini
  • 1 onion
  • 2 cloves garlic
  • Salt and pepper

Mushroom lasagna.

Preparation

  • As a first step, we need to wash and peel the garlic, onion and pepper.
  • Then we need to cut them into small pieces and add them to the pan with olive oil, then lightly fry them and add the tomatoes with salt. If you want, you can also add a pinch of sugar. We need to prepare a small pan with these ingredients, then set aside.
  • It is necessary, after that, to wash the eggplant and zucchini. It is not necessary to peel them. In any case,  we have to cut them very finely.
  • We also need to wash the spinach. If they are frozen, we must thaw them and pass them well in order to remove all the water.
  • In another pan, with olive oil and salt,  you must now fry the zucchini, eggplant and spinach, then set them aside.
  • Then, as in the previous case, we need to prepare the lasagna sheets according to the instructions in the package. Once ready, we will place a layer in a baking dish.
  • Then, on this layer, we will add part of the spinach mixture and we will put a second layer of leaves.
  • We will repeat this operation to obtain at least 3 layers of lasagna and 3 layers of vegetable garnish (zucchini, eggplant and spinach).
  • Then, on the last layer of leaves, pour the tomato sofrito and add vegan cheese on top.
  • Finally, we will bake the lasagna at 180 degrees for about 15 minutes, until golden brown.
  • Serve them hot and enjoy them!
